Sager/Clevo configuration advice

I've never given much thought to notebook PC's I've bought. But I've been using Premiere Pro, After Effects, and other Adobe tools recently and want to get a powerful notebook to handle video editing. I'm thinking about getting a Sager with desktop CPU and 32GB of RAM. I do have other questions.

These can be configurable with multiple physical hard drives. is there a bennefit to getting multiple hard drives or just one bigger main drive? Note I plan on configuring with SSD drive/s.
